Peanut Butter Pie…or the secret to a man’s heart!

I met my husband in college while working in a restaurant. He was a bus boy and I was the “hostess with the mostess”. I was planning my first visit to his dorm, and I asked Granny what she thought I should make to take him as a surprise. She suggested Peanut Butter Pie, but that wasn’t enough. We also ended up making a Mason jar full of Peanut Butter Fudge. Now that I think about it, maybe it wasn’t love, but sugar induced delirium? Needless to say, I woo-ed him with my mad cooking skills (with help from Granny). We have now been married almost thirteen years. You should have seen the envy in that dormitory! I may have not been the hottest mamma on campus, but let me tell you, a homemade pie goes a long way with men. I may be older, have a little more gray hair, and deepening crow’s feet, but I can still whip up a mean pie!

Peanut Butter Pie
6 ounces of cream cheese at room temp.
1- 12 ounce container of whipped topping
1 cup of peanut butter
1 cup of powdered sugar
3 tbsp. milk
1-9 inch pie crust (I found chocolate pie crusts at the store and couldn’t resist!)

Instructions
Beat the cream cheese until fluffy. Add in the peanut butter and whip until smooth.

Sift in the powdered sugar a little at a time, and beat until smooth. Add the milk. Then, gently add in the whipped topping. I used the whisk attachment on my mixer to whip it all up.

Spoon this mixture into the pie crust and refrigerate for a couple of hours.

I then mixed peanut butter and powdered sugar into a crumbly mixture and sprinkled it on top of the pie. And…a couple of chopped Reese’s cups. Just for good measure. Because it just needed it. And I spotted them in line at the grocery checkout line. Let’s have a moment of silence to honor the marriage of chocolate and peanut butter…

I am trying to include pictures of Granny’s aprons and other family items, so I included some of my great- grandmother’s birdcage. My Granny Emma was with her mother-in-law when she passed away at home on the family farm. I couldn’t even begin to count how many people she has cared for over the years. She has such a gentle spirit and loving heart, that most of her loved ones would call for her to wait by their beds when it was time to die. Granny says that when she went to uncover the bird in the morning after my great-grandmother’s death, she found the bird dead. I’m not sure if that story is sweet, or creepy? I used the bird cage as a child to keep my pet turtle in. He lived until I released him into the wild blue yonder. Good old John, with a hot pink “J” painted on his back…just in case I found his shell later.

And this our neighbor’s cat, Boo. He is quite the curious cat. We have adopted him…I just haven’t told our neighbor yet!
